You can find the whole recipe here. Start by placing 4 ramekins on a baking sheet and set aside. Preheat oven to 350 degrees. To make the Crisp Topping stir together the flour, sugar, chopped nuts and crushed gingersnaps (crush the cookies quickly in a food processor) in a bowl until combined. Work the butter into the dry ingredients until it becomes crumbly and kind of sandy. Set the Crisp Topping aside. In a medium mixing bowl, stir together the frozen berries, sugar, cornstarch, 1/2 cup of the crisp topping and 2 or 3 tablespoon of orange liqueur (if using). Divide the mixture evenly between the four ramekins. Top each of the ramekins with approximately 1/2 cup of the remaining crisp (You will probably had some topping left over. Just store in a ziplock baggie in the freezer to use later). Place the ramekins on the sheet pan and bake in the oven for 30-35 minutes until browned and bubbling. Allow to cool for 15 minutes before serving. Top with a scoop of vanilla ice cream for a real treat!

right? Reading cook books and coming up with our own recipes. Sienna
loved helping me. As i made the pie dough I made sure to make extra
so she could play with some. She loved it and spent hours playing with
her special "real" dough. Too Cute. The pie is delicious and was pretty
easy to make. I was able to bring it over to my in laws who loved it as
well. So all around a keeper of a recipe.
French Apple Pie:
Crust
1 cup flour
1/4 cup cold butter
1 tsp. salt
2 to 3 tsp. ice water
(or buy a pie crust, which ever works for you)
Filling
6c. sliced, peeled Granny Smith apples (about 6 apples)
1/2 c. packed brown sugar
1/2 c. sugar
2 tbsp. lemon juice
1 tbsp. cinnamon
1/4 cup flour
1 tsp. vanilla
Crumble Topping
1/3 c. butter
1/4 c. brown sugar
1/4 c. sugar
2 tsp. cinnamon
3/4 c. flour
Preheat oven to 375 degrees. Make pie dough in food processor. Combine flour, salt and butter until butter is the size of peas. Then slowly at ice water, until the dough makes a ball. Refrigerate for at least 30 minutes. In large bowl, combine sugar and flour. Mix together with apples, brown sugar, cinnamon, and lemon juice. Roll out pie dough and place in pie pan. Trim edges and crimp. Take left over dough and put back in food processor and add one tablespoon of flour and mix. You should have small crumbs, sprinkle crumbs on the bottom of pie crust, do NOT press them into the crust. This will help keep your crust from getting soggy. I saw this on food network and it really works.
layer in apple mixture into pie. I think you get a much better result when you layer the apples in the pie, you get less air pockets and more apples. It might take you an extra minute put it really does make a difference. Make French Crumb Topping by mixing 1/3 cup butter and sugars together. Cut in 3/4 cup flour. Sprinkle topping over apples in pie plate. Bake for 50 to 60 minutes or until topping is golden and apples are tender.
Let cool for at least an hour. Serve warm with ice cream or whip topping.

HAPPY THANKSGIVING..........Here is a recipe I thought you would like for the holidays Rub butter or oil over the skin of the turkey until it is completely coated. Sprinkle with salt and pepper and any other seasonings you prefer. Take a knife and gently separate the skin from the breast meat; Slide lemon halves under the skin with the peel side up, one on each side. This way the juice from the lemon will release into the breasts. Cover and bake for 30-45 minutes. Remove cover and continue to roast until juices run clear, basting every 15-20 minutes. If you've followed these steps correctly, your turkey should look like the one in the picture. Bon Appetit! |
I know this is not very helpful in terms of my NaNoSweMo goal but I made soup, spaghetti sauce and bread today and did not knit very much. Niels was sick over the weekend and was not fever free for 24 hours yet this morning so he stayed home from school. Every time I walked into the living room to sit on the couch and knit while they played there was some chaos in my way or something that needed attention. I got several loads of wash done (and folded!) and a lot done in the kitchen, most notably, the bread. I don't bake bread very often but I was looking in an old spiral notebook that has recipes I wrote down in the mid-90s, I think. My mom needed the recipe for Swedish meatballs that she gave me and that's where that one is. I was looking through it and found a recipe for Honey Whole Wheat bread which I say is from the bread book in Bon Appetit series of cookbook. I think that must mean it came from my mother's house so I am going to have to look at it again when we visit them because the recipe seemed woefully lacking to me.
There's no mention of kneading, just of beating the dough in the mixer. That made some sense to me until I got to the second "knead" and the bread was so incredibly sticky. I decided to knead it by hand instead. I had also substituted bread flour for the all-purpose and I think my whole wheat is pastry flour and I also added vital wheat gluten, so I wasn't exactly following the recipe anyway. I kneaded in a bunch more flour until it felt smooth, let it rest, and then shaped a loaf put it in the loaf pan rather than just beating it in the mixer and "turning it out" into the loaf pan. It was a success. (It's shiny because I had just brushed it with butter when I took this photo.)
The crust is very thick but the crumb is soft and sweet. I started to write that sentence in the past tense because I cut it and we all ate a couple of slices with dinner and it's almost gone! This is one of the reasons I don't bake bread that often, it takes all day and then is gone in an instant. I need to learn to make more than one at a time.
Maple-Walnut Oatmeal Cookies- adapted from the Martha Stewart Halloween Magazine
Makes 12 cookies (I made mine smaller so I ended up with around 20 cookies)
1 1/2 cups old-fashioned rolled oats
3/4 cups unsweetened finely shredded coconut (I used sweetened coconut, toasted in the oven)
1 1/3 cups all purpose flour
1/2 teaspoon salt
1 cup packed light brown sugar
1 stick plus 1 tablespoon unsalted butter
1/3 cup pure maple syrup
1 teaspoon baking soda
2 tablespoons boiling water
1 cup walnuts, toasted and coarsely chopped
sea salt for sprinkling (i used this for sprinkling on the top of each cookie)
Preheat oven to 300 degrees. Line baking sheets with parchment or silpat. In a bowl, combine oats, toasted coconut, flour, salt and sugar. In a saucepan over medium heat, mix butter and maple syrup together until melted and combined. Hint: spray measuring cup with Pam before filling with maple syrup. The syrup will slide easily out of the measuring cup! Remove from heat. In a small bowl, combine baking soda and boiling water. Immediately stir into the butter mixture until combined. Stir into the oat mixture and fold in the toasted walnuts. At this point I covered the bowl of dough with plastic wrap and chilled in the fridge for around 30 minutes. The recipe doesn't call for doing this but I feel it really helps the wet ingredients fully incorporate with the dry ingredients creating a better tasting baked cookie. Form dough into 1/4 cup balls (I used a medium sized scoop and got a smaller cookie) and place on cookie sheet about 3 inches apart, 6 to a sheet. Flatten each ball slightly. I added a little sprinkle of sea salt to the tops of each cookie. Bake until golden brown and set, around 20 minutes. Transfer to wire rack to cool

When I landed up in Melbourne I met with old couple after a year of stay in Ballarat(July2007-july 2008).The old fellow name is Haroon. I thought and expected there would many things to learn and live quality life in Australia but its utter crap to live in Australia I cannot tell this thing everytime to everyone.I blogged this information whatever.I have experienced.This kind of nonsense is not in India.
This guy name is Haroon Mohamed who talks in fucking British accent in an Australian way and to impress his with his hard work and other things indirectly he says to his wife he has called me to chat with him in home.

Hi PradeepGood that you are trying out this course. While I am sure it will help with getting work you must be aware what it entails.Basically you will have to apprehend shoplifters, druggies and drunks most of the time. The rest of the time it will be surveillance and crowd control. Wherever you work you must understand the rules and the law. Check closely first.I don't know how I am going to get you a doctor or Lawyer to give you a clearance. The idea is that they must know you first.I can give you a reference but here you just can't ask a doctor for a reference.Ask your college course coordinator. You can find the entire recipe for Salted Brown Butter Crispy Treats here. Start by buttering an 8x8 inch pan or you can do like I did and line the entire pan with aluminum foil and spray with Pam for super easy cleanup. Set the pan aside.
In a large pot melt a stick of butter on medium-low heat stirring frequently making sure to scrape the bottom of the pan. The butter will become foamy and then start to get golden brown. Watch the butter carefully and stir constantly because it goes from golden to burned quickly! When the butter looks nice and golden brown remove from the heat and quickly stir in the 10 oz. of marshmallows until they become all melted and smooth. Add in 6 cups of Rice Krispies Cereal and 1/4 tsp. of sea salt or you can use coarse kosher salt like I did. Mix well to coat and spoon the mixture into the prepared pan. Using a oiled spatula (or you can just spray some Pam on your hands like i did) press the mixture evenly into the pan. Make sure to press down very firmly as this will help ensure that your treats don't fall apart when you try to cut them. Let the treats cool completely in the pan. When cool, remove from pan and cut into small squares. To package mine for gift giving I simply cut some small squares of colored wax paper and placed in between the treats. I wrapped them up tightly in plastic wrap, taped the ends together and tied with a ribbon and added a tag. Easy and fun!
